The healthy foods industry in India has experienced remarkable growth, surging 156% since 2021. This revolution is being driven by cloud kitchens that have transformed from cost-saving experiments to mainstream profit centers attracting significant investment.

“When we started Salad Days in 2014, the healthy food segment was virtually non-existent in India. We pioneered the ‘salads as a complete meal’ concept, challenging the notion that salads are merely side dishes,” shares Varun Madan, Founder & CEO of Salad Days.

The evolution has been dramatic. Early operations in non-commercial areas have given way to sophisticated tech-enabled facilities. This transformation represents a fundamental shift in India’s F&B landscape, with cloud kitchens evolving into powerhouses attracting over $500 million in venture capital in 2023 alone.

Sustainability has become a cornerstone of successful healthy cloud kitchens. “Our organic farm in Vasant Kunj not only ensures the freshest ingredients but also allows us to control quality at the source,” explains Gajendra Singh Chauhan, Executive Sous Chef – New Product Development, Salad Days. “This farm-to-table approach has reduced food wastage by 28% while maintaining the nutritional integrity of our dishes.”

The industry’s growth is driven by operational innovation. “Through strategic kitchen placements and efficient processes, we’ve reduced delivery times from 55 to 30 minutes while maintaining an 8-minute standard preparation time,” notes Madan. “This operational excellence has been crucial in changing perceptions about healthy food delivery.”
