Four Irish recipes celebrating Dublin’s flourishing food scene

Over the past two decades Irish food has undergone a significant evolution, moving beyond traditional stereotypes into a modern, innovative and internationally influenced culinary culture. Twenty years ago only six Irish restaurants held Michelin stars. As of 2025 there are 23 restaurants with this prestigious accolade. While Michelin stars are not enough in and of themselves to make a food culture, they certainly help, particularly from an international perspective. Many of these stars are in recognition of the quality of Irish food and the chefs cooking this food in many different styles.
